ACKNOWLEDGEMENT & WAIVER INFORMATION

I understand and agree that Completion and submission of registration information and payment indicates your acknowledgement and acceptance of the terms and conditions listed below.

1. I acknowledge that I have been advised of medical risks that may result from such participation in the culinary instructional program (the “Program”) offered by Dorchester County, Maryland (the “County”) under the Board and Director of Recreation & Parks for Dorchester County, Maryland (herein “Board/Director”) and I represent to the County, Board/Director that I have consulted my personal physician or other health authority and am physically capable of such participation in the Program without injury or any medical issues.

2. I recognize the risks of injury and illness inherent in any activity/fitness program and am participating in the Program under the express agreement and understanding that I am hereby waiving and releasing and holding harmless the County, Board/Director and all County employees and agents from any and all claims, actions, costs, damages or expenses, including Attorney’s Fees and Court Costs (herein collectively “claims”) arising out of my participation in the Program or any illness, injury or death resulting from my participation in the Program, and I hereby agree to indemnify and hold harmless the County, Board/Director from and against all such claims except claims proximately caused by gross negligence or willful misconduct of County, Board/Director. I am waiving any liability of all persons concerned in my transportation to and from activities relating to the Program.

3. I hereby execute and deliver this waiver and release voluntarily and with the full understanding of the contents and consequences thereof and to induce County, Board/Director to permit me to participate in the Program.

4. I understand I am responsible for any medical bills, etc. which I may incur resulting from me being injured while participating in the Program. This includes all phases of the Program activity.


5. Recreation and Parks reserves the right to use photos taken at events. These images will be used for the promotions of future events.

Dorchester Career and Technology Center is located next to Cambridge South Dorchester High School 2465 Cambridge Beltway Cambridge, MD 21613 Join Chef Zinnel in the Culinary Arts Kitchen at the Dorchester Career and Technology Center as she shares instruction and techniques for preparing traditional Italian meals from unique regions of Italy! Participants will work in teams to prepare a specific course for a meal inspired by the traditional cooking of a chosen region of Italy. When each preparation has been completed, the entire class will sit and enjoy a full meal they prepared based on the cuisine from that Italian region! Register for one class, two classes, three classes, or register for all four classes in the series and receive a 15% discount! Each participant will receive: all required ingredients for meal preparation, hands on cooking instruction from Chef Charlene Zinnel, full use of DCTC's state of the art culinary kitchen, an incredible meal featuring cuisine from a unique region of Italy, and an outstanding culinary experience you'll want to enjoy again and again! Class 1. - Oct. 3rd: Sicilian Region Menu - Appetizer: Caponata alla Siciliana is a classic Italian recipe from Sicily. The main ingredients are aubergine, bell peppers, celery, onions, tomatoes; Entre: Braciole, rolled-up flank steak basted with tomato sauce, an everyday Italian dish; Sicilian Orange Salad; Dessert: Cannoli alla Siciliana - Crisp cylinders of fried dough filled with fresh ricotta cream, cannoli are undoubtedly Sicily's most famous contribution to the world of sweets. Class 2. - Oct. 10: Rome/Lazio Region Menu: - Zuppa di Cozze: Mussel Soup; Entre: Saltimbocca alla Romana ("saltimbocca Roman-style"), which consists of chicken, prosciutto and sage, rolled-up and cooked in dry white wine and butter. This classic Roman dish is sauteed in butter and extra virgin olive oil. Saltimbocca is so good it's moniker translates to “jump in your mouth”; Broccoli Rapini and Risotto; Desert: Tiramisu: A creamy dessert of espresso-soaked ladyfingers surrounded by lightly sweetened whipped cream. Class 3 -Oct. 17: Tuscany Region Menu: Appetizer: Crostini di Fegato (Crostini means "little crusts") are served along with different types of Crostini (artichokes, smoked salmon and butter, tuna etc.; Soup: Zuppa Di Pasta Fagioli - Fagioli Pasta and Bean Soup a classic Northern Italian comfort soup; Aqua Pazza- poached white fish {“crazy water” in Italian} refers to both the dish and all of that delicious broth!; Dessert: Cantuccini - These classic Tuscan biscotti are very popular all over Italy! Class 4 - Oct. 24: Participants will make their own fresh pasta and 1 of 6 unique Italian sauces to enjoy with pasta!
